Quick & Easy Carrot & Coriander Soup

Carrot & Coriander Soup:

1 onion

1 bag of carrots

1 bunch coriander

1pt vegetable stock or chicken stock (fresh or cube)

1/2 pt milk (of choice)

Oil

Salt & Pepper


Peel and chop onions and carrots. Heat a little oil in a saucepan and fry onions gently, until just turning transparent. Add carrots turn down the heat to very low, cover with a lid and allow the veg to ‘sweat’ for about 10-15 mins. Add about 1/4 the stock, bringing to the boil. Take off the heat and blend, add coriander, blend again adding more stock, finally add the milk, seasoning and serve.


Freezes well.
