Quick and Easy Banana Bread

Banana Loaf

140g butter, softened, plus extra for the tin

140g caster sugar

2 large eggs, beaten

140g self-raising flour

1 tsp baking powder

2 very ripe bananas mashed

Pre-heat Heat oven 180C/160C fan/gas 4.

Grease a 2lb loaf tin

and line with baking parchment. Cream butter and caster sugar (I usually cheat and do it with a hand whisk!). Slowly add 2 eggs and a little of the flour. Fold in remaining flour, baking powder, and bananas. Pop into the loaf tin and bake for about 50-60 mins or until a knife comes out clean from the center. Allow to cool on a wire rack. Freezes well
