Really easy to make and freezes well. You can easily make this vegetarian by adding mixed root vegetables instead of the meat.

250g Minced beef or lamb or chicken

1 onion chopped

1 carrot chopped

1/2 red or yellow pepper chopped (I use a bit of each for color)

1" root ginger crushed (or a teaspoon of easy ginger, never tried it with dried?)

1 tbsp of tomato puree

1 Stock cube

1 tbsp Curry powder

2-3 Garlic cloves crushed

140g basmati rice

Pinch sugar

Pinch salt

30ml cold water

Lemon or lime and handful of chopped coriander (I have made this without if not in the cupboard!)

Fry onion in a splash of oil over a medium heat, and once turning transparent add sugar and salt. Add meat stir well until browned (approx 4/5 mins), now add the carrot, peppers, ginger, and garlic, stir well and cook for a couple of mins. Add the stock cube, tomato puree and finally, the curry powder mix well and now stir in the basmati rice. Add water and turn heat up and bring to the boil, once boiled turn down the heat (low), cover and cook until all the liquid has been absorbed (approx 10-15mins).

Stir in the coriander and squeeze of lemon or lime to finish and serve.
